Carbonara

My family loves this dish sooo much. It is quick and yummy, two things that make for a great meal! My husband doesn't like mushrooms usually, but he will eat them in this, (I think its the BACON)!!! When I made it this time it was for lunch, so we didn't have any sides, but usually I serve it with bread and a simple salad.




One package spaghetti noodles
4 green onions or half a cup of onions, chopped
half a cup of sliced mushrooms
5 pieces(or so) of bacon
2 garlic cloves minced or pressed
3 egg yolks
1 cup cheddar cheese

Cook the noodles according to directions

Meanwhile cook bacon, remove, chop up and set aside. Reserve 2 Tablespoons of grease; add onions, mushroom and garlic. Cook until tender, add in bacon.

Put above mixture into a large bowl, add hot noodles, and then immediately add egg yolk. Stir until coated and yolks start to cook. Add cheese, stir, then serve!!

Try being creative and adding things like zucchini or use pepper jack cheese instead of cheddar. It is always fun to try different things, life is short and food is good!

Enchilada casserole

i like to throw a bunch of stuff together in a baking pan and see what I come up with! I see it as a challenge to take stuff I have in my fridge and cupboards and make them into something yummy! This is the first time I made my own enchilada sauce. 



Here is the recipe I used:
Ingredients

  • 3 tablespoons vegetable oil
  • 1 tablespoon flour
  • 1/4 cup chili powder
  • 2 cups chicken stock
  • 10 ounces tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt

Directions

In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder and cook for 30 seconds. Add stock, tomato paste, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out.

I baked a few chicken breasts with salsa on them and then shred them, cut up half an onion, shred some cheese, and cut up corn tortillas!! Ad the sauce and mix it all up in a baking dish and top with more sauce and cheese! Now I made this for my family one of the nights I worked so i don't have a finished picture because it was all gone by the time I got home. I was going to ask Jeremy to take a picture but I forgot! He baked it at 350 until warm and bubbly!!

Don't be afraid to take what you have and make something yummy out of it. My constant challenge to myself is to make dinner without running to the little market down the street from me!!

Pizza Pocket Muffins

I recently started working again and so my mission is to make frozen foods for my family to eat when I am working. I found a recipe for pizza pockets and thought that they would be yummy as muffins! I love muffin pans. I have the standard size and the mini pans. I am on the look out for a good deal on some large ones, but I don't think I would use them as much. The standard size cups are perfect for my kids' little hands! The recipe is here at Heavenly Homemakers blog, she has some amazing recipes! I just put them in the tins at the end instead of making them into pockets.




I dont have a finished product picture because they got eaten to fast!!!!!! I will do better next time!
